Default Cabbage Casserole - the LC Way!

Being from the South, I was raised on some marvelous food. Unfortunately, quite a bit of it is hi-carb! But here's my remake of one of my mother's best recipes ... and it has only 4.7 countable carbs per serving. (Recipe serves 4)

<B>Stovetop Cabbage Casserole</B>

1/2 head cabbage, cut into about 2" square pieces
3 tbsp butter
1/2 c canned mushrooms (or fresh -- I use canned)
1/4 c. chopped green onions
4 tbsp heavy cream
3 oz Velveeta cheese, cut into small pieces
Salt & pepper to taste


Cook cabbage in water (or steam) until tender; drain very well.

In saucepan, melt butter and add onions and mushrooms. Saute until the onions are getting soft, then add cream. Stir well and bring to a gentle simmer. Add the cheese, and stir often until it is melted and everything is nicely blended. Stir in the cooked cabbage and heat just until the cabbage is reheated. Add salt & pepper to your personal taste.

Serves 4 as a side dish, 2 as a main course.

We had it last night, and the spouse -- who doesn't even LIKE cabbage -- thought it was great! Funny thing, I didn't even miss the crushed Ritz crackers from my mom's version!
