There are many brands of coconut oil, many of which do not have a coconut flavor. Read the labels, and try a few. The best are found at health food stores, and are "virgin" and cold-pressed. One jar I bought at Wal-Mart was a lot cheaper. Some coconut oil purist will probably say it's evil, but it works.
Here's my favorite decadent coconut oil recipe. WARNING: Don't eat the whole batch at once or you'll get a major tummy ache. You have to "work up to" a big slug of coconut oil. Also...this stuff can be addictive. Too much of a good thing is always too much.
CHOCOLATE BARK
1/4 cup coconut oil, melted
1 to 1.5 TBS cocoa powder (more or less)
1/4 tsp. stevia or other sweetener (I use 1-2 packets Splenda)
Chopped nuts if you want
Put a metal baking pan in the freezer for at least 10 minutes to get it good and cold. Line it with wax paper. Melt the coconut oil and stir in the chocolate and sweetener. Add the nuts. Pour slowly onto the cold pan. Put the pan back in the freezer for a while. Break it into bark. Store in the freezer.
