Okay I know soup recipes should go into the soups catagory BUT this soup is more like a meal.. MY hubby loves the Zuppa Toscana from Olive garden so I recreated my own lo carb version by omitting the potato's.....
1 package of spicy italian sausage
6 slices of bacon
1 half onion chopped
2 garlic cloves minced
1 big bunch of Kale
1 49 1/2 oz. can chicken broth + 3 cups more broth
3/4 cup heavy cream
remove sausage from casings
brown sausage set aside
brown bacon remove to papertowel
add onions to bacon drippings saute until soft
add garlic saute for 1 min
pour in chicken stock
bring to boil
add clean chopped Kale
boil about 5 mins
add sausage and bacon
lower heat
add heavy cream
pepper and salt to taste
Im not sure of the cal/ or carb count but most of the ingrediants are pretty lo in carbs and this soup is very filling and decadent!
Ooh... ooh.... WHY couldn't you add in chunks of TURNIP to this wonderful soup recipe (to replace the potatoes)???... They work so great for hashbrowns and in stews... I have GOT to try this!!!!.... thank you so much, dear.....
Soup is ready and is definitely delish!! I added turnips when I added the Kale and it's perfect. I cut the turnips into small chunks so I didn't need to give them extra attention. Thanks again, YUM
I finally got around to making a pot of this last night. The whole family enjoyed it! I had to use spinach since I couldn't find kale in WalMart or Winn Dixie. I'll definitely be making this again!
