Found this on the forum. I've been really craving crackers or chips. I altered the original with almond flour instead of ground pecans..

I ate half of it with a Wholly Guacamole mini cup, but sure feels like I cheated!!

This made about 14 crisps at 5 carbs for the entire batch. Net carbs would be 3.

Really, really good.

I want to try the Atkins Truffle recipe, but that sounds solo DECADENT !

Hiltm, good for you on experimenting with low carb yummies!

There is a kind of crisp called Whisps, which are 100% cheese. I buy them at Costco; haven't seen them anywhere else. If you haven't the time or the inclination to bake, they work well.

Ooooo, I'd read about a cheese crisp. I've looked all over - except Costco. Thank you for the heads up.

Since I'm committing to this being forever eating, I really need to expand my repertoire of "fun and goodie type" foods.

Target has another brand of cheese crisp...Mrs Cubbison? I haven't tried it myself since I stock up at Costco, heard they are similar.
Just bought a smaller bag of Whisps at a nice neighborhood market in MA, they have a store locator list on the Cello website. http://cellowhisps.com
Cheddar version is "coming soon"

Whisps are $9.99 at Costco -- so good for when you can't make your own, but pretty expensive otherwise.

Sounds fantastic. Off to Costco this weekend!

How is it the label says 1 carb, but they claim 0% carbs?

Hmmm. Maybe because you have to eat a serving to get to 1 carb, which is quite a few chips, so ONE chip has about 1/15 of a carb which isn't, according to the FDA, necessary to claim.

FWIW, my favorite way to eat them is to put them on a small plate, like a coffee saucer, spread them out, and then lay a slice of cheese on top, and nuke them. Like chips and cheese, where the chips are also cheese!

At first when I saw your cheese crackers I thought, "I have something like that saved in my journal. Well, it's the exact same recipe with pics.

Cheese and Nut Crackers (not for induction)

1/2 cup shredded cheddar
1/2 + 1/8 cup Kraft grateded parmesan
1/4 cup pecans
1 T fresh thyme leaves

I put all ingredients in a mini prep food processer and pulsed about 5 times.
I then spooned heaping teaspoons on a parchment lined cookie sheet and baked in a preheated 400 degree oven for 6 to 8 min until golden brown and crispy.
YUMMO!!!

This made 18 crisps at 4 carbs for the entire batch.

Meme, I'm pretty sure that's where I'd copied it from!! After the fact, I tried to search to give proper credit, but can't get the search function to work.. Sorry for not giving you credit!!

Went to Costco, and they no longer carry Whisps. They replaced it with some artesian wheat laden thing. :-(
Found them on Amazon; a case of 12 ~ $3.99 a 2.12 oz bag. Is that a good price? Or should I keep searching ?
