Default Pizza Frittata

Just found this recipe on the American Egg Board and it sounds yum!!!

Pizza Frittata
(Makes 6 servings)

  • 6 eggs, beaten
  • 1/2 cup skim or low-fat milk
  • 1/2 cup chopped green pepper
  • 1 cup chopped seeded tomato
  • 2 oz. (about 1/2 cup) pepperoni slices, chopped
  • 1 teaspoon dried oregano leaves, crushed
  • Dash pepper
  • 1 tablespoon cooking oil
  • 2 oz. (about 1/2 cup) shredded low-moisture,

    part-skim mozzarella cheese
  • Mixed greens, optional
  • Apple wedges, optional
In medium bowl, beat together eggs and milk until well blended. Stir in green pepper, tomato, pepperoni, oregano, and pepper. Set aside. Wrap handle of 10-inch omelet pan or skillet with foil to make it ovenproof. Over medium heat, heat oil in pan until just hot enough to sizzle a drop of water. Pour in egg mixture. Cover. Cook over low heat until eggs are almost set, about 10 to 12 minutes. Sprinkle with cheese and broil about 6 inches from heat until eggs are set and cheese is evenly melted, about 1 to 2 minutes. Slide onto serving platter and cut into 6 wedges. Serve with mixed greens and apple wedges, if desired.

The rest of my family eats regular pizza, so I make my serving on an egg "crust." I beat one egg, pour it into a small greased frying pan & cook it covered on low heat until it's set. Then top with pizza sauce, add cheese and toppings like sauteed mushrooms onions and some pepperoni. Cover again and melt the cheese. Slide it onto a plate and eat it with a fork. It makes a nice single serving. It's really really good, and doesn't make me feel "gross" after eating it like regular pizza does.
