Default sausage balls reinvented

I have a recipe from my sister-in-law that I always liked. The only problem is it is hi-carb. I've seen on the forum the idea of using pork rinds for breading. I decided to experiment. the recipe called for 3 cups of bisquick, I used 3cups of crushed pork rinds. followed the rest of the ingred.(1# bulk sausage, 10oz.grated cheddar cheese), and added one pack of dry ranch dressing. Mixed together and made 56 balls. baked at 400 for 18min. They came out to be 1/2 carb each. A mouthful of flavor. 2-4 were VERY satisfying. I will definitely be making these again. great for a small snack when I'm looking for something with lots of flavor. Oh, I used 2c. plain pork rinds and 1c. hot flavor pork rinds. I now have something to serve at home when we have people over and need some kind of lo-carb snacks.

Thanks for this idea! I love those kind of sausage balls and it's good to know the pork rinds work in them. Will be trying this holiday season!

they have been a life saver today as I really wanted something greasy and spicey.
