Default Buffalo Chicken Meatballs!

These are Rachael Ray's recipe, one of my favorites even before I started low-carb! They are sooo good and addicting! I've ate them the day after also, and they reheat great. ***When I make these, I always have to let them cook a little longer than the recipe states, just to make sure the chicken is cooked thoroughly***Enjoy!

These have 3.2 carbs per serving.

Yes, I have a thing about ground poultry too. When I was a girl, my mom told me that chicken hot dogs were made up of chicken lips and I haven't been able to eat them since.............and chickens don't even have lips. I laugh at this now and I intend to give it a fair shake.

I made this recipe this weekend....I could not find ground chicken in the stores so I got ground turkey instead. Is there that much difference between the 2 as far as taste? Other than that substitution, I made the recipe as written. I must say, I was underwhelmed. I brought them to work today to share with my hubby and son. I am not sure I can get them down. This may go back to my old mental block. I do think that I gave it a fair chance, tho.
