Chicken Broth with Dumplings
Serves 4-6
1tbsp oil
4 carrots, roughly chopped
1/2 bunch celery, roughly chopped
4 large onions, halved
4 bay leaves
10 peppercorns
1.8kg chicken (= 3.96lb)
Chopped flat leaf parsley, to serve
Dumplings
500g finely ground chicken mince (= 1.1lb)
small bunch flat-leaf parsley, chopped
2 eggs
1/2 tbsp ground fennel seeds
zest of 1 lemon
Heat the oil in large pan over medium-low head. Add carrot, celery and onion. Cook for 6-8minutes until onion softens but doesn't brown. Add the bay leaves, peppercorns, chicken and 2.5L (10 cups) water. Slowly bring to the boil over medium heat, skimming any froth from the surface. Once boiling, reduce heat to low and gently simmer for 1 hour. Allow to cool slightly, then remove chicken and set aside. Strain stock, discarding vegetables and herbs.
Heat over to 180C (= 356F). Meanwhile, for the dumplings, combine ingredients in a bowl. Use two spoons or wet hands to roll about 30 dumplings. Chill while you finish stock.
Remove chicken meat from bones and set aside. Place bones on a baking tray and lightly roast for 20 minutes. Return bones to stock. Simmer over low heat for 2 hours. Strain stock, discarding solids, and season.
Return the stock to the pan and bring to a simmer over medium-low heat. Cook the dumplings in the stock, in batches of 2-3, for 6-8 minutes until cooked through, then remove and cover loosely with foil.
Ladle broth into bowls, add 5 dumplings to each, sprinkle with parsley and serve.
Note: 1 litre of good-quality chicken stock can be substituted for the chicken broth.

Note: I did not include the 1.8kg chicken in these counts as you don't actually include the chicken in the meal - it's just the flavouring from the bones. I'm sure it wouldn't matter if you put it in the soup though
