My husband, who has been jonesing for pasta like crazy, loved them. I just didn't like them, especially in a tomato meat sauce. Maybe I'd like them more in a Japanese style dish. The texture is just a little rubbery for my tastes. But I don't miss pasta, so...

I am starting to stray away from unfermented soy as the more I read about emerging info on soy being bad for men, and the unfemented soy being bad and possibly carcinogenic to humans.

I am going to place an order with miracle noodle as I cannot find them without soy around here..

First post here

I just had to share this recipe for spring rolls I had last night.
Well It was just rice paper stuffed with the zero calorie noodles and cucumber dipped in

nuoc chum (vietnamese dipping sauce)
1 clove garlic
2 to 3 Thai bird chiles (or 1 small jalapeņo or serrano chile), cored, seeded, and minced; more or less to taste
1/2 tsp. ground chile paste; more or less to taste
2/3 cup hot water
1/4 cup granulated sugar
1/4 cup fish sauce
2 Tbs. fresh lime juice
2 Tbs. shredded carrots (optional)

I love this so much and each roll only has 19 calories (thats how many calories are in a sheet of rice paper) the noodles and cucumbers are calorie free! You could add chicken or shrimp for a more hearty protein filled meal. But it was just so good I had to create an account and share with everyone!

I can't help wondering if you have lost your way, because this is a low carb, not a low calorie forum. Posting a recipe with 50 carbs all from sugar is not at all helpful.

Maybe you have some actual low carb recipes to share?
