Unhappy I'm a bit confused- can you please help (long)?

I'm trying to follow the Montignac plan using the first book which I understand is a bit confusing. Can you please hepl me with a few questions?
1. Fruit. I know it's ok to eat them on an empty stomach before Bfast. Even if I choose protein-loaded Bfast I can eat some fruits. But what about protein/fat lunch or dinner? Can I have an apple 30 min. before lunch/dinner? Its GI is lower then 35 so theoretically it's ok?
2. Snacks. My problem is that I can't eat big meals 3 times a day. My portion sizes are really small, so I start feeling hungry again in 3 hours or so. What can I eat as a snack? Is eating fruit ok? Can I have some cheese with veggies? Or may be whole grain cracker with 100% fruit jam and a cup of cappuchino?
3. I'm working in a place where buying a healthy lunch is nearly impossible. I can bring things with me from home, but it's difficult to have a protein/fat lunch. Much easier to have a high-carb lunch: bring homemade cold muesli/bran cereal and some milk, fruit, veggies- things that don't require heating. Does this option exist?

Default And another question...

The book says only carbs with GI<35 for protein/fat meals and with GI<50 for high carb. meals. However, I've read for several times here that in order to loose weight I have to keep ALL carbs under 35. Can you please help me with that one?
