Welcome aboard Debbie,

I've seen a recipe similar to what you describe somewhere, let's see if someone has a link to it.

For quiche I use 4 eggs to 2 cups skim milk. Then whatever type of filling I feel like. (Ham, spinach, mushrooms, cheese, onions, bell peppers, type etc)

If you use uncooked veggies, the water from the veggies make the filling a bit running...so I saute fresh veggies then drain them before using.

bake at 350 for 45 minutes to an hour.

(and no I do not use a crust.)

Smile lowcarb quiche recipes

hi Debbie, welcome to our forum.

There's a number of great Quiche recipes in our Members' Recipe web-page. Click on Recipes, on the red menu bar at the top. Look in the "Breakfasts" section.

A quick'n'easy frittata-type thing I make quite often, is to use leftover cooked meat, or freshly cooked and crumbled ground meat or sausage taken out of the casing .... drain off all the grease, add some chopped green onion (scallion), sweet red or green pepper, leftover cooked veggies if desired (broccoli or cauliflower are especially tasty)... top with a little grated sharp tasting cheese, pour beaten eggs over all (how many depends on number of servings, etc...) ... cook over medium heat till bottom is just set, then pop under the broiler for a few minutes, till the top is puffed and bubbly. I intentionally make extra; this is really delicious cold too, cut into wedges, can be eaten with the fingers (well, ok, you need a napkin ... ). The ingredients vary with my mood, and what's in the fridge!!

Enjoy,

Doreen
