Default need a coconut custard pie recipe emphasis on custard

i made a coconut cream pie, blender style, that came out good, but there was no custard part which is what i really love!! so does anyone have a LC version of it that tastes something close to high carb CC pie? thanks in advance.

I recently made Atkin's "Flan" recipe (from his book) and added 1 c. of unsweetened coconut. I thought it was quite yummy. It had a "firm" custard type on the bottom and the coconut floated up to the top. Let me know if you need the flan recipe.

Hello zuzu, I've finally gotten around to getting my hands on the Atkin's book with the flan recipe in it. Sorry it took so long...here it is.

Flan

5 eggs
1 cup heavy cream
1 cup water
5 packets of Equal or equivalent
1 capful almond extract
dash nutmeg or dash cinnamon

Preheat oven to 350 degrees. Whip first five ingredients in blender for 3-4 minutes. Pour into large baking dish or individual dishes and sprinkle top with nutmeg or cinnamon. In oven set in larger pan half-filled with water. Bake for 40 minutes or until set at 350 degrees.

Total grams: 15.5
Grams per serving 3.9

(I added the 1 c. unsweetened coconut right after the first 5 ingredients were beaten.) I thought it was pretty good!

This recipe is on p. 412 of Dr. Atkins' New Diet Revolution.
