Default Lunch questions

So my husband needs more than just meat. I need to figure out some good stuff for his lunch. What would you all suggest as good lunch box meals?

This time of year I really like using lettuce and tomato with mayo and lunch meat as wraps. I also like egg, chicken and/or tuna salad wrapped in lettuce. I really do love meat, and have a tough time adding enough carbs sometimes, so that's really all I can offer. As an aside, I really have tried to limit my cheese intake, which was a good non-meat alternative. Oh, and of course, regular salads with meat additions to make them more hearty.

Celery is Very low in carbs as compared to other veggies.Great to mix in chicken or tuna salad with a little green onion which are much lower in carbs than big onions.
Pack some leftover cooked veggies from dinner.

You guys are proving my point that there just isn't much in the way of veggie alternatives to take for lunches. Now for me, I just do without them other than the little cherry tomatoes, but my husband is a muncher and needs to be doing that while at work. I send pork rinds, but again, you can only eat so many of those. We can do the "chicken type" salads for a day or 2, but then there are 5 more days to deal with.........

Cherry tomatoes are my "go-to" lunch pack item. Mix them in chicken/tuna/lettuce salads or a handful as a side item where chips used to be. If you are far enough along, an oz of salted almonds is a handy lunch item.

Side dill pickles
Olives
Celery boats with cream cheese/palmetto cheese/peanut butter
Cucumber spears with flavored salt
Guacamole with cucumber/raw mushroom/celery "chips"
Cubes of cheese
Spiced up mayo (or low carb dressing) with raw califlower or broccoli

Um, that's all I can think of right now, but you get the idea! :-)

I like roll-ups.
I buy Boars Head corned beef which is og carbs.
I take a dill spear and roll the slice of meat around it. Make 3-4 of them and put in a baggie.

I'm helping my son start a lo carb diet - Atkins induction - ish (he's going for health and does not need to lose weight so will transition to OWL pretty quick). He does not have a refrigerator available at work, so while we're on the subject, can people include some lunch ideas that can be room temperature for half a day, please?

I'm really not that snacky anymore, so try to fill up with flavored water I did forget about guacamole though - total yum with cucumbers! Celery was a big favorite until it started to make my lips numb. Anaphylaxis is not on my 'to do' list! As for non-refrigerated snacks, jerky strips or cubes work, just check the package before you buy. Some add a lot of sugar. Nuts are good but only in moderation! Also, I like wasabi peas to snack on if the mood strikes. Baby carrots, an apple, a banana - all in moderation! Non-refrigerated lunches are tougher. Hard boiled eggs still in shell usually are ok at room temp for half a day. Also, if you can freeze a meal, it might be thawed by lunch.
Dunroven - I like the Atkins frozen meals - especially the beef merlot.

I am a bit confused though. I didn't think we could have the carrots and the apples as they are too high in carbs? Also, we don't do the already fixed meals, handy, but too expensive for us.

Crustless quiche is good. Fry up some diced onions and bacon or ham. Add 2 cups cream and 4 beaten eggs, salt, pepper and bake in pre heated oven at 350 for 1 hour.

Also meatloaf, with 1 lb ground meat, 1 beaten egg, 1 pkg Lipton Onion Soup Mix, and 5 tbs flax seeds.

You'll love the meatloaf as well. Don't be put off by the flax seeds.
They have a neutral taste and add a little crunch to the top. They are also a good source of fiber. Most bulk stores carry them.
