Recently I've been feeling a bit demoralized, like "they" will never get LC or the CIH, etc---that they gluttony-sloth/CICO paradigm will be the basis for every research related to obesity and its control.

I wish he was *my* doctor (sexy is sexy)!

What's ironic is that Prather Ranch (t-shirt) grain-finishes their beef, negating the health benefits the cattle built up for most of their lives. I asked them why, and they said their customers like the taste better (i.e., they sell more that way).

They are out of their minds. Grain-fed meat is flavorless. I gave some grass-fed meat to my parents and they said it tasted just like the meat in Illinois. They loved it.

Now, let's quite fighting over this doctor. He's mine and no one else's!

I've had Prather Ranch beef. IMO, it tastes better than feedlot beef, but not as good as 100% grass-fed beef. I figure that many of the ranch's customers are coming from feedlot beef, so the ranch's product maintains some familiarity to them. From a broader perspective, I'd rather people eat Prather Ranch beef than feedlot beef.

What if the culprit is not just carbs?

Maybe it's the combination of carbs and fat that causes insulin problems. Or maybe it's about the kind of fats we eat. Or when and how often we eat. Or all those things together.

I'm starting to think that "carbs = insulin = fat/disease" may be as simplistic as "the fat you eat is the fat you wear", the slogan we heard in the eighties and nineties.

People get better from obesity, diabetes and heart disease on lowfat vegan diets. That's a fact. I personally don't believe it's an optimal diet, but it does show that carbs aren't the reason for their problems.

Just putting it out there...

Even the great Taubes is evolving his thinking. His latest idea (not supported by any research, though) is that sugar, over a long enough period of time, wrecks your carb metabolism so that all carbs become a problem for people.

But there's no evidence I know of that carbs + fat have a negative synergy.
