I just got the muffin top pans I ordered off of Ebay to use for rev rolls. I'm thinking this recipe would be great baked in the muffin top pans. It would be like a McDonald's style griddlecake.

i made this today, but made them more like crepes and added a tad of blackberry juice and 2 blackberrys and cream cheese in the center and folded and a drizzle of sf syrup, it was wonderful...

Okay, I made these in muffin top pans and they turned out like...muffin tops! Crazy, I know.

Each recipe makes 1 muffin top. I baked at 300 degrees for 10 minutes.

It's nothing like what I was going for, which was a McDonald's griddle cake, but with some tweaking (maybe maple flavoring and less baking powder) I think it could be a lot more similar. This might also make a good basic muffin.

I've attached a picture.

I wanted to make these but couldn't find my flax meal. Instead I used 2 tablespoons of my Flax-Z-Snax Vanilla Almond Hot Cereal mix. Tasty! It didn't have the slightly 'sour' taste that I sometimes get when I make the hot cereal. I also added a bit more vanilla too. It poofed up nicely and was tender like a pancake with fun little almond bits in it.

I was wondering about this too. I am guessing you peel, seed & chop the zukes and continue as you would for regular applesauce on the stove, with Splenda, spices, etc. I did make the Zucchini Cobbler recipe, and that was wonderful!!

Chayote squash also makes delicious fake apples! It even looks like it too if you slice it correctly.

I made the recipe and upped it by 6 times and added almost 1/2 cup of pumpkin and baked in muffin pans, made 12 muffins. Very moist and yummy. Even better today than they were yesterday! But don't know what this did to the carb count.
