Default Simple broiled zuchinni~SOO good!

My DH and I usually grill lots of zuchinni over the summer...but as our grill is covered with a foot of snow, I tried this version last week and it was so good. I did NOT time it, so you'll have to keep an eye on it while its cooking!

Broiled Zuchinni:

Any number of small zuchinnis that you prefer.
Olive oil to coat.

Slice zuchinni thin...I chopped each zuchinni into about 3 inch long pcs, then sliced them no more than 1/4 wide.

Toss in bowl with olive oil to coat.

Lay each slice on a broiling pan. I think a baking sheet would work fine too.

Sprinkly with seasonings of your choice...I like coarse ground salt & pepper.

Broil on low (put pan on middle shelf NOT top shelf in oven) turning zuchinni over once during cooking~Season once flipped too if you want. (remember, I didn't time this, so keep an eye on them!).
Increase heat to high broil for last 2 minutes of cooking.

Serve warm. Again, these are so good. My hubby used to think Zuchinni was EVIL...but he AND my two kids (ages 6 and 8 so believe me, They're PICKY) Love this side dish!!

I may have to try this. A year or so ago we tried zuchinni wedges grilled after being tossed with olive oil and herbs. It came out amazing and so different then expected.

I've done this w/parmesan and garlic.

It's also great with some thinly sliced red onion mixed in.

Also great with chopped mint and/or basil added afterwards and/or garlic and lemon juice
