Default Your Favorite Meal Idea's for Atkins!

Hi All; I was just pondering what some of your favorite meal ideas are! You don't need to list ingredients etc...we can always PM each other for that. I just want to hear what you all like for meals!
Mine are:
Favorite Breakfast: Simple: My homemade sausage and eggs! Sometimes veggie omelet.

Favorite Lunch: La Tortilla wrap with Ham or Roastbeef (lettuce etc) or chicken or tuna salad wrapped in large lettuce leafs...

Favorite Dinner. Hmmm: My homemade Meatballs...grilled steaks...Veal Parm (use pork rinds)...roasted chicken..BBQ on the grill (anything!)

Favorite Dessert: SF Jello with homemade whip cream, My Italian Ices.

Lets hear some ideas!

Here are a few that I've been enjoying lately:

BLT salad (with or without a side of deviled eggs.)

Faux-Teriyaki chicken thighs (marinated all day in soy sauce, fresh ginger, lime juice and splenda) with gai lan (or cole slaw, if you're in a picnic mood). (The same marinade works wonderfully on salmon or black cod -- or steak, for that matter.)

Pork shoulder roast with creamed mushrooms and cauliflower puree to put them on.

Taco salad.

Salami and cream cheese on a La Tortilla.

Grilled steak, zucchini sauteed in butter, salad.

Baby spinach salad, with chopped hard boiled egg, red or yellow pepper, thin slices of red onion, few sliced mushrooms and a little bit of diced cheddar with mayo. Love my salad!!!
Favourite meat meal, either hamburg patty or italian sausage with carmelized onions, and sauted pepper.

HHHMMM.....Russel Stovers Chocolates!!!!

No, really...

Breakfast: bacon and eggs (fried or scrambled w/cheese)

Lunch: usually left overs from dinners, but ham, cheese and olives if there aren't any and pork rinds dipped in cream cheese (I'm out of pork rinds right now, though )

Dinner: huge hamburger patty smothered in saute'd mushrooms and onions with a ton of melted cheese on top and a side of some veggie



By the way...great business idea you had with the measuring. Have you had anyone take you up on your offer yet? You should start a thread on that. It's hard to measure yourself, and there's probably lots of singles who could use help. Might be a great way for lc-ers to meet.

  • Eggs & bacon or sausage
  • Spinach & bacon quiche
  • Smoked chicken thighs
  • green salad with blue cheese
  • greek salad w/homemade Syrian Salad Dressing
  • Leftovers!!
  • Veggies - spinach, asparagus,zuccini, summer squash, green beans
  • MEAT: steak, chicken, pork
  • Condiments: Sour cream, guacamole, cheese

I have also been enjoying brocolli & cauliflower w/ hollaindaise sauce and the mashed cauliflower recipe.
My hubby & I both love to experiment with different ways to prepare our entrees. We have had some definite successes and some....well....items that we won't try again.

Hope you net some ideas from folks, Jake. You getting a little bored with your current selections??

My favorite meal while on induction was an omlette with smoked salmon and feta cheese. Can't do those though on candidia adjusted diet.

Now it's yogurt mixed with protien powder, or mixed up with coconut for a salad dressing.

Spaghetti squash with sauce and meatballs. Broccoli and cauliflower w/cheese. Cream cheese and avacado.

I found some soy cheese, chedder with jalapino. Now I have to figure out how to make nachos. I don't really want to use pork rinds and LC tortillas aren't here. Maybe I'll make my own tortillas after the move

Favorite Lunch - roast beef, cheese, green onion, mayo, wrapped in lettuce.

Favorite induction meals..

Breckfast~~~spinach/brie omelet or
leftover hamburger w/melted cheese

lunch~~~~~lg. romaine leaf stuffed with tuna salad,or turkey & cheese
(dipped in mayo)


Dinner~~~~BBq meat (chicken, sausages,steak or burgers) with green
salad and red cabbage slaw



snacks~~~sf jello w/whip cream, pork rinds, string cheese, sf ice pop

Cakes, would you mind sharing the recipe for your chicken enchiladas? The only thing I miss on this WOE is my enchiladas! I'm still on induction, so I'm not sure if I can even eat it. Please share!

Default Chicken Enchiladas

It's really easy-

I buy the Rotisserie chicken from the grocery store. Shred it (take it off the bone). Put the chicken in a bowl or glass pan. Pour enchilada sauce over it (it's legal on induction), put shredded cheese on top, and bake or microwave it until cheese is melted. Add green onion, a dallop of sour cream and or black olives, it's done.

I've used green and red enchilada sauce. I sometimes used leftover steak instead of chicken. My family loves this dish, they never complain about the tortillas being gone.

i absoleutly cant live without the atkins crustless cheesecake recipe (cream cheese, heavy cream, vanilla)
my fav breakfast would be veggie omlettes
also, i love beef marinated in sauce, stir frys, shrimp, crab, catfish......its really endless, lol but the cheesecake is my fav

My favorite dinner is Atkins Rattatoulle, with Feta cheese added after it comes out of the oven. That with Farmer Sausage from my little butcher.

Lunch a big green salad with everything in it and my homemade meatballs.

Brk: Right now........ is Flax meal/oatmeal Porridge with chopped hazel nuts and no sugar maple sryup.

Dessert, don't really bother with it, but during the day I love just a little chunk of Ross's or Pure Delight no sugar chocolate. One bar will last me 3-4 days

Some of my favorites - eggs scrambled just right, with a couple of tbs of cream and some cayenne - a blt on a lowcarb tortilla - a rib pork chop breaded with keto crumbs and fried in lots of butter- daikon homefries - Dr A's greek salad - Karen's zucchini, sour cream and cheese bake - my homemade smoked mennonite-style sausage - and of course a thincut rib steak. The only odd thing about this diet is that I have become VERY picky about the quality of some of these simple foods. I have to have the eggs just so, still creamy, not rubbery, and the rib steaks seem to be better at safeway than Fred Meyer. I never noticed or cared about this stuff before.

This is so interesting!

Breakfast: yogurt with da vinci syrup and a couple of strawberries sliced

Dinner: four way tie: Italian Wedding Soup (on this site!), eggplant rollatini, roasted chiles stuffed with eggs and bacon, low carb pizza (tried it for the first time this week!)

Sidedish: Green beans with blue cheese and walnuts salad

Dessert: shaved ice with sf irish creme syrup and cream poured over
