That sounds good. No cast iron skillet, but I'm sure that I can use my nonstick skillet.

Shakshuka does sound good - been on my want to try list for awhile!

Today: I made tuna bread yesterday, had been wanting to try it. I blended it so it would be smoother. So for breakfast I made a tomato and mayo sandwich with a little lettuce. It was good - ok. You really have to be a tuna fan I think to use it. Tomorrow AM I'll try a Melt with the rest of it. Decaf w/HC

Thank you so much for this tip to blend/purée the mixture I've made the tuna bread before ... thought it was okay but mostly objected to the coarse tuna-flakey texture. Will try this version soon .. Water-pack tuna is best for this, in my opinion. It tends to be "blander" than oil- or brine-packed.

Sounds perfect for a tuna salad sandwich!

I have perfected my Griddle Muffins. I can do a recipe but it's so simple I wasn't sure it was needed.

Half package of 5 oz. side pork rinds, coarsely crushed
2 eggs
heaping tablespoon of sour cream
cup of berries

Grill the batter like pancakes with butter. Flip. Done. I eat them as-is. They keep well and microwave with minimal loss of crust action.

You could bake them, I guess? Haven't tried it because grilling does the crispy crust part so well. So tasty and satiating.

You're welcome! I thought that was a good suggestion, I don't think I'd like it chunky either. Of course I only had olive-oil packed. The melt was really good though, worth making the "bread" just for a batch of those!

Hi Werebear! Exactly! I do want to try the canned chicken version, though, might be milder.

Glad you gave a recipe, because even if it's simple, I need a recipe...not one of those smart cooks who can whip up things from memory! Well, MIMs and omelets, that's about it.

All these breakfasts sound so YUMMY!
I had oatmeal, a hamburger patty, and a pumpkin panna cotta made with the carton kind of coconut milk and Stevia.

had this after fast or break fast - it's fast to make and goes down pretty fast - also gives fast satiety and helps me think fast...

265g Ground Beef and 3 Large Eggs

"breakfast" was pretty late, (just not hungry) but I made those "Griddle Muffins" Werebear - I was thinking of an Egg McMuffin - so had a sausage pattie, cheddar slices and made two of these "cakes"... wow they were good. Very crispy - they reminded me of KFC extra crispy coating. Very filling! Thanks again for sharing that recipe - it was a treat!

I have to keep things simple. The chaffles and muffins in a minute I save for when I really need a change and to be honest, they do not satisfy me like bacon and eggs. So today was my typical boring breakfast of 2 XL eggs, scrambled, and two strips of bacon. And of course, black coffee.
