Talking blueberry psyllium pancakes=Yummy Fiber!

OK. My doctor said I should take psyllium for the fiber, sooooo . . . I've been experimenting. :-)

If you like blueberry pancakes, here's a yummy recipe. I use konsyl 100% natural psyllium fiber (no sugar or flavors added; hence less than 1g of carb per serving).

MIX in a bowl

1 scoop of Keto blueberry hot cereal mix with 1/4 cup HOT water

ADD to bowl

1 rounded teaspoon of Konsyl Psyllium
1 dash cinnamon
1/4 tsp baking powder
1 egg
1-2 TBL of cream (your choice, depending on how big the egg is!)

BEAT for 20-30 seconds with a hand mixer

LET SIT for 2-4 minutes. It will thicken/swell a bit. Heat some butter in your skillet in the meantime or pop some sausage in the microwave!

POUR into greased skillet and cook til golden brown on each side.

TOP with sugarfree/lc syrup or jelly. I like LOG CABIN, but that's up to you!

If you like these, try using 1 scoop of chocolate, banana, or some other flavor of Keto shake mix instead of the hot cereal mix. I find them a lovely alternative for fiber, too!

ADVICE: Don't let the batter sit too long, or the fiber will not be as "useful". Also, don't think, "Wow! These are great! I'll make 4!" because that much fiber can be really uncomfortable later (hint, hint). Finally, DO drink a big glass of water with this, so the fiber gets to work in a favorable environment.
