We love Indian - style food. I make red thai curried veg based "casserole" . Even learned to make red thai curry homemade, without sugar. Served as a meal ,maybe with meal, rarely with rice.
Watched. Sadly the people have followed the American profile of poor health.

India has been misled with the same anti-saturated fat and eatmorehealthygrains garbage as here in the west. Their traditional fats .. ghee, coconut and palm oils .. have been vilified in favour of cheap industrial oops I mean heart-healthy oils like canola and soybean. That, and the popularity of sugary soft drinks everywhere, even in the most rural areas

I read some years ago that rates of sugar consumption in the form of candy and sweets is very high and hence high rates of diabetes. Dunno if that's completely true, interesting though. I've never tried traditional Indian food due to the carbs, but am sure it's awesome.
I know a few lacto-vegetarian Indo-Canadians and they all seem to have allergic 'shiners', stomach issues, stuffed up noses, exhaustion, etc., but won't listen to anyone suggesting that they may be dairy intolerant and should try an elimination diet.
