the ginger coconut chicken turned out really yummy-I marinated the chicken breast overnight in coconut milk and fresh shredded ginger, then cut into strips and rolled in a combo of shredded and chipped coconut, then baked it at 350-they are really yummy, my kids even liked them! We had it with steamed broccolli, my kids are broccolli fanatics Thanks for the ideas and I'm going to try that almond flour cajun spice one soon!
Oh, and I did add a little agave nectar to the macaroons, they're good but messy, definitely not something I can make all the time but for a treat now and then they work.
Next on the agenda is a roast-I'm thinking of rubbing it with this great ranch herb mix I got at the health food store and cooking it in the crock pot with onions and carrots......
