Default 13 Coins Ukranian Joe Special

Not sure of the carb count - but I love this!

Melt together:
1 T butter
1 T olive oil
Brown together:
1# hamburger
1 medium chopped onion
1 C sliced fresh mushrooms
Add:
4 eggs, slightly beaten
6 C raw spinach or 1 pkge frozen/chopped -
that you have thawed
1/2 t oregano
1 t salt
1 t pepper

Spoon onto your plate, and top with:
sour cream freshly grated parmesian cheese

You certainly got my attention with the name alone! But the dish sounds yummy. I'll give it a try. I especially like this type of recipe, as I have all of the ingredients on hand almost all the time.

I put this through fitday and it says the carb count for the entire recipe is

without mushrooms...(because I don't like them... )
19 - 7 fiber = 12 g

with mushrooms... (because I know others do like them...)
22 - 8 fiber = 14g

This does not include the sour cream and/or Parmesan cheese topping.

Only thing I can find doing a brief web search is that 13 Coins is the name of a restaurant in Seattle and Ukrainian Joe is a dish they serve.

It wasn't bad, but it wasn't that impressive to me when I made it. I might do it again if we have ground beef and can't think of anything else to do with it.
