Default Eggplant strips as fettucine

For all I know, this may have been done to death but I just discovered it. I've done this with zucchini before, but eggplant holds up better and has a more substantial taste.

I peeled and sliced an eggplant into strips about double the size of actual fettucine, melted a generous amount of butter and garlic salt and sauteed til limp. Be sure to cook it enough so that there is no dry sponginess left. Keep the heat low enough to not brown the butter too much. Takes about 10 minutes and makes a delicious satisfying meal or side dish.

This is good to know; I just bought zucchini to try out with my new julienne peeler. I wouldn't have expected eggplant to hold up better, since it is less firm from the get-go! Good to know! I like eggplant better, anyway!

I agree, eggplant used this way not only tastes better in Italian dishes IMO, but it also doesn't exude all that water you have to deal and make your final dish "soupy" sometimes. Both good things in my book.

BTW, I've always loved your user name, because one of my all-time favorite lines in moviedom is Scarlet Ohara's line at the end of the movie, right after Rhett walks out on her she says: "I can't think about this now. Tomorrow is another day!" It's been my motto and motivation from day 1 of low-carbing. The line works, whether I've OVERdone my carbs for a day, or I've used up my carbs and really hungry late at night. I get to start each day with a clean, new slate.

Buttoni, I used to build stained glass windows out of my home. I always thought, if I ever get a separate studio I would call it "Gone With the Window". That didn't happen, but I still love the name.

How interesting GWTW. Clever business name! I used to make stained glass windows, too. I did all the transoms in my Victorian house in Galveston, the big front door window, house number pates, mirror frames, hand mirrors and all kinds of stuff. I still have my tools and grinder, but don't have any windows I really want to do in this newest house we retired to. I don't do it for hire anymore. I kinda miss it and may get into it again.

Buttoni, I had to downsize so much after splitting up with my husband...my glass tools are long gone. I have it in the back of my mind to possibly do it again in the future, probably just some copper foil. It's a nice relaxing hobby once you get the hang of it.

I'm a renter now, though, so I'm pretty limited in what projects I can take on. I only have one window to hang glass in front of and I already have an aspen tree/mountain one there.

I haven't dared set foot in a glass shop in a long time - it's so irresistable!

Times have changed. Now I just wish I had an eggplant. Ha!
