Default Corned-beef hash

Just invented this! I cooked half a chopped onion until soft and a little brown, added in some finely chopped brussel sprouts (you could use another veggie, or none at all). Added a clove of minced garlic. Added pepper and sauted until everything was glorious. Then I cooked an egg and scrambled it together with some corned beef hash. Delicious! Even better the next day.

Next time I'll try adding green peppers and maybe red pepper flakes.

Doesn't corned beef hash have potatoes? Brussels sprouts are versatile! The kids put them in quiche the other day and it was amazing!

substitute cubed sunchokes for potatoes. problem solved!

You can buy canned corn beef..no potatoes. It is in the store near the canned corn beef hash. It is great heated up with a fried egg on top, or heated up with some sauteed spinach and onion, or...

I put cauliflower rice in it this last time. Came out good. Also added dried oregano and hot pepper flakes.
