I've made these pork rind french toast cakes.

The majority of the time when I make mug bread I fry them in either butter or coconut oil until they are crispy like toast, or butter both sides and squash down with a spatula like grilled-cheese until crispy. It works!

Hmm. Recent experiments in this thread have me thinking I have grilled cheese possibilities I had not realized. Might check that out, moving forward.

Also, mashing the berries into the cream cheese keeps them from going bad. Grilling them can be tricky, as I like blackberries and those are good sized.

I just did a grilled cheese with these! I did a half recipe, 1 egg + 1.2 oz crushed pork rinds + 2 Tbsp homemade yogurt (my replacement for sour cream). Fried up the two 'pancakes', then cooked cheese between the two. Delish; dipped it in SF ketchup.

Thanks for the tip to check Walmart for pork rinds....plain pork rinds has been hard to find around here . Walmart has Great Value brand pork rinds so hopefully they won't disappear from the shelves any time soon.

Oddly enough, Walmart was out of pork rinds the last time I placed my curbside pickup order! Who knew? I never dreamed they would be a sell-out item. But they were back in stock yesterday for my pickup.

I'm back to an elimination phase, leaving out seeds and nuts. So walnuts as an addition are out for the nonce.

I love fresh fruit in them, but until it's baking time again (we are not swelteringly hot, I working around the oven for a bit) and griddling does carmelize the fruit. Which is not a bad thing, necessarily. Which is why baking is definitely on the agenda.

But yesterday I was hungry and so experimenting was out. I had gotten a package of dehydrated mango. Which turned out well, but was labor intensive. I needed to chop the chunks, and they either explode under the knife or have the consistency of leather. Then I folded them into the sour cream for softening, adding some cream to help them along.

It worked out well, but all that detailed tedious chopping is not sustainable for me. However, this might work via blender. But there's no point to that, since fresh and frozen also work in blender.

Got an idea while rummaging for cream cheese, which I always have on my griddle muffins.

Goat cheese! Will explore.

I have gotten a national brand from Hannafords instead of Aldi, and while the weight was right, the product needed more eggs. So adjust to taste. We might need different proportions with different brands!

Broke down and got a Dash mini waffle maker. I just don't want to cook in the summer. Perhaps a blender/appliance combo will break that mental logjam.

These came out good.


Fathead bread rolls

Ingredients
1 cups shredded mozzarella
2 tbs cream cheese
1 cup almond flour
2 tsp baking powder
1 egg, beaten

Instructions
Preheat the oven to 400F.
Melt the shredded mozzarella and cream cheese together in the microwave.
Next, add the almond flour, baking powder and beaten egg. Stir well to mix.
Once the dough is cool enough to handle, knead it with your hands to get it smooth. If it is too sticky add some extra almond flour, and knead again.
Divide the mixture into 8 parts, and shape each portion into a ball. Place each one on a baking sheet lined with a silicone mat or parchment paper.
Bake for 9-10 minutes until golden brown on top.

4g net carbs per serving (two rolls)
