As an experiment, I weighed myself yesterday morning and then again today. I have done this a couple of times in the past when working with artificial sweetener recipes and bread type recipes.

And every time, I gain 1 pound.

Yesterday I was experimenting with fat maple syrup9sugar free) bombs, and with making maple cookies with spices.

And today I gained a pound from taste testing.

Through taste testing batches I consumed 4 small cookies (containing 2 TOTAL Carbs each) and 1.5 fat bombs (containing 1 CARB each).

I am about ready to say Bread of any type is off the table.

And possibly any form of artificial sweetener.

My last hope was sorbitol since it has a slower effect on insulin spiking...

I will try with just a fat bomb and see what happens

Sorbitol isn't a good sweetener to use because it is digested about 50%. So you have to count half the carbs in it. It is also the type of sweetener that can cause digestive issues.

I'd recommend using erythritol,sucralose, stevia, truvia or one of the other sort. Actually, if you combine 2 or more they cancel out each other's negative taste profiles and get stronger. There's a good thread in the cooking section about using sweeteners.

As far as gaining goes, it could be the additional carbs, or it could be causing water retention.

Hey Nancy,

Thanks for the Suggestions and thoughts... Before doing sorbitol, i tried all the ones you mentioned. I also tried Twin. I gained weight with those as well.

I even have tried making my own sweetener from Sweet Yellow Onions and Red Bell peppers caramelized and blended. Didn't quit like the taste of that. It wasn't bad...

I will have to try and see if it is the carbs or the sweetners...

So next time I will try just fat bomb experimenting only...
