We just made this last night for the second time. It's really good! Don't cut your cauliflower pieces too small though, because they really do shrink down quite a bit roasting for one hour. We also sprinkle in some salt as Mrs. Dash is salt-free. There's a picture of this on her website. Very good! I make this just for my husband and I and I use 2 heads of cauliflower! *Ü*

I was just thinking that we used to put parmesan cheese on our popcorn. I bet that would be good on this. Or some kind of cheddar cheese.

Question

Do you think i could just use frozen cauliflower instead of a head of cauliflower? I'm all about making things simple.

I have also used frozen, I just had to leave them in there a little longer.

Default Burned my popcorn!

Hi...Thanks for the recipe. I followed the recipe directly...But found that leaving the popcorn in the oven for 60mins burned the cauliflower. I was hungry, so I ate it anyway It wasn't too bad, but I'm wondering if I messed it up?

Actually, I should have mentioned that I didn't have to leave it in the oven for as long as it said, either. Also, don't cut it up too small because they get even smaller when you cook them.

All you guys who tried it, was it actually crunchy??? Sounds so weird I just might try it. I love seeing my non-low carb friends cringe when they hear about the weird foods we eat. hehe Annie
