homefries variation
The various recipes for radish, turnip or daikon homefries found on this site are just wonderful.Yesterday I tried adapting one of my favorite potato recipes. Biba Caggiano says one of the first signs of spring in italian cooking is tiny new potatoes pan-roasted in butter and olive oil with garlic cloves and sprigs of fresh rosemary. She suggests using a melon baller on reg. potatoes to get the same effect. Anyhow, a very very tasty tuber dish. I diced the daikon, started the garlic cloves in the butter so they would be nice and soft, then put in the radish and two sprigs of rosemary. A fair amount of salt and pepper. It turned out very well, IMO. The only thing missing was the crunchy bits. Next time will try some crumbled pork rinds, as has been suggested here.
