Default Low Carb N Loving It

Hey all. . . I'm back, and bigger than ever. . . recently married, baby due in August, and I'm getting back on track with my wife's help.

I'm a big BIG fan of cooking, and am quite the amateur chef, which helps in some instances (I can cook whatever I want) but hurts in others (when I can't cook).

There's a show on Food Network, in the wee hours of Wednesday morning called Low Carb and Loving It. . . it features a chef that lost over 200 pounds doing low carb, and his family lost something like 500 pounds altogether.

I'm not plugging the show for no reason. . . the guy was featured in DANDR.

Anyways, some of his stuff is great! And his approach is what I think I need to move toward. . . cooking lots of lean proteins, plenty of fats, and TONS of veggies. . .

Any of you see it?

I think his show is pretty good and you can find some of his recipes at the foodnetwork site as well as he has written a couple of cookbooks books I think. I also think you should look through this website's recipe section. Here is a link to some great recipes. Kevinpa is quite the creative low carb cook so don't forget to check out his journal for his recipe list.

Watching it has inspired me to make all sorts of dishes using tons of vegetables and realizing if you're not going to eat a tomato because it has carbs, you're doomed.

I have never cut out tomatoes and onions, they are just too valuable for cooking! And especially with onions, a little can go a long way. Even right now, I am doing M&E and I have added some salsa to my omelette without any problems. Or minced onion to my egg drop soup and tomato sauce to my ground beef. I think as long as you are aware of the higher carbs, they are fine to use for adding flavor to cooking.
And I must say, George Stella's pumpkin pie is awesome! (its is on the website)

Ive only seen it a couple of times, yeah his whole family lost a bunch of weight!!!! I cant seem to be on food network when hes on lol...

Well, today was my first day back "on". I'm looking forward to dropping some pounds. . . baby comes in late August.

And I've got a monster physical in about six weeks.

Gonna see if I can kick up the exercise thing a few notches and help the cause.
