induction friendly thanksgiving idea- creamed spinach casserole
I found this recipe on the Kraft website. The original called for 1/4 cup milk and 1/3 cup croutons. I substituted half and half for milk and pork rinds for croutons. I'm pretty sure it would taste good even without the croutons. I'm going to make the dish this week and will let you know how it turns out.
Here's the recipe:
Creamed Spinach Casserole
Prep Time: 10 min
Total Time: 40 min
Makes: 6 to 8 servings
1 pkg. (8 oz.) Cream Cheese, softened (6.17g carbs 0g fiber) 810 cal
20 oz. frozen chopped spinach, thawed, well drained (27g carbs 15g fiber) 143 cal
1/4 cup half & half (2.6g carbs 0g fiber) 79 cal
1 tsp. lemon pepper seasoning (?g carbs) ? cal
1/3 cup pork rinds (0g carbs) 52 cal
MIX cream cheese, spinach, half and half and seasoning until well blended.
SPOON mixture into 1-quart baking dish; sprinkle with pork rinds.
BAKE at 350°F for 25 to 30 minutes or until thoroughly heated.
Totals: 36g carbs, 15g fiber, 1084 calories
For 6 servings: 3.5g net carbs, 180.6 calories
I couldn't find the counts for lemon pepper anywhere. If anyone knows them, please share the info so the recipe can be adjusted- thanks.
