Post Cheesy Artichoke Dip

(serves 6-8 people)

Ingredients:
1 cup of shredded Cheese (3 cheese blend)
1 cup of low-fat mayonnaise
½ tsp of garlic powder
1 cup of Shredded Parmesan cheese
1 jar of marinated artichoke hearts
2 bags Pork Rinds/veggies for dipping

Directions:
1. Drain artichoke hearts. Chop finely.
2. Mix all ingredients together.
3. Put in ungreased 8 or 9 inch glass baking dish
4. Bake at 350º for 20-25 minutes or until golden
brown. Mix half-way through to ensure even heating.
5. Serve with pork rinds or veggies.

Entire Batch
Fat: 69g
Carbs: 12g
Fiber: 3g
Protein: 35g

Sounds really good but, is there a reason for the low-fat mayo? I make my own mayo and I wouldn't have a clue how to make it low fat!! Is it just force of habit from previous dieting?

I would just use plain mayonnaise as the home made version usually has yogurt or sour cream to make it low fat.

Interestingly enough, my DIL, who normally is all about the low-fat, makes a pretty tasty artichoke dip with full fat cheese and mayo.

Basically: 1 cup mayo, 1 cup cream cheese, 1 can diced chiles (drained), 1 jar marinated artichoke hearts (drained and chopped), and 1 cup shredded parmesan. Bake at 400 degrees until it starts to brown on top. Very tasty...haven't figured out the carb totals yet, but I'd guess around 15 for the whole shebang, but it's very rich and would make several servings. Now I'm hungry; gotta go make this!
