Default Cheese and Candida

I was hoping this forum could point me in the direction of the reference that discusses why cheese is a NO NO during yeast infection. I am fairly knowledgable about cheese manufacture so I am a bit puzzled why cheeses are frowned on.

Mozzarella goes thru a "pasta filata" process that essentially kills most microbes, Process Cheese is essentially steril.
Although you cannot say cheese is lactose free it is definatly fairly low <0.5% but more often lower.

Help me understand please. Most people quote "because of the fermentaion process".....that doesn't make a lot of sense.

I grant that mold ripened cheeses wouldn't make a lot of sense.

I agree with you. I only have problems with the mold ripened cheeses. All the others give me no problems at all.
