Default zucchini

HI,
Ive looked at my book and have used the carb counter on this site, but I am still not sure as to how many carbs are in one average size zucchini. I havent had any...my book lists squash, so is that what I should use? ANyway, I want to try one grilled in a little bit of butter, so if anyone knows exactly, please share.

Hi there,

In one cup of summer squash (of which zucchini is one) there are 3 carbs - 1 of which is fibre - so eat up!!!

Thanks for such a quick reply. I have been eating the same veggies:
Lettuce, celery, tomatoes (very little) onions, peppers (for seasoning when I make stirfry) and greenbeans. I have the book, but those are basically the ones I like for induction.
So being able to add a little more variety will be great!

Zucchini is great and you might want to try egg plant too. I just slice them both and grill on my griddle or the bar-b-que. Add a little butter to the griddle or put oil on the slices if you are grilling them on the bar-b-que.

I often make a tasty supper dish by sprinkling some cooked bacon pieces over sliced courgettes (zucchini) or aubergine (eggplant) and topping it with grated cheese and putting under the grill!!

Ohh the eggplant sounds great too! Thanks you all! I did grill the zucchini with a little butter, and it was delicious! I also bought some shrimp and made my own scampi. It was the first time that I did, and it was really good too! I read good recipes, but if they call for lots of extra sauces and spices...I just cant cook them. Cant afford all the extras!
