Viennese Cresants -- Makes 24 Cookies

Preheat Oven to 325F degrees

Cookie Ingredients:
10 TBS + 2 Tsp of Atkins Bake Mix (16g total, 8g fiber, 8g net carbs)
3/4 Cup Finely Chopped Walnuts (12g total, 6g fiber, 6g net carbs)
6 TBS Unsalted Butter softened to room temperature (o carbs)
1/3 Cup Splenda Pourable (9g carbs)
1 Tsp Pure Vanilla Extract (0.5g carbs)
1/2 Tsp Ground Cardamom (0.7g total, 0.3g fiber, 0.4g net carbs)
1/2 Tsp Orange Zest (0.25g total, 0.1g fiber, 0.15g net carbs)
Pinch of Salt (omit if you use salted butter)

Dusting Sugar:
1/4 Cup Pourable Splenda
4 Drops Pure Vanilla Extract
Of which you'll use 1 TBS of splenda (1.5g carbs) and a negligible amount of vanilla to count in.

1. Mix all cookie ingredients in a large bowl either by hand or in food processor fitted with the metal blade so ingredients mix to form a crumby mixture in bowl

2. When all ingredients are blended and crumbly, hand knead into a dough

3. Take 2 teaspoon size chucks of dough and roll into a log shape about the length of your pinky finger and place on an ungreased cookie sheet

4. Shape each "log" into a cresant shape and continue until all cookies are on baking sheet

5. Bake at 325 for 25 minutes (until they are firm to the touch and slightly golden but not overcooked)

6. Remove from oven and transfer to a cooling rack

7. Place cooling rack back onto cookie sheet and make "Dusting Sugar" in a small sealable container

8. Place Splenda in sealable container and drop one drop at a time pure vanilla extract into the container in different spots.....seal container and shake well for two minutes to distribute the vanilla extract.

9. Lightly shake Dusting Sugar over cooling cookies - leave any "excess" that falls on cookies while they cool.

10. When cookies are cool, shake off excess Dusting Sugar and store in a cool, dry, airtight container. These cookies are very fragile and may break easily.

With the Dusting Sugar (of which you'll actually have on the cookies about 1 TBS of the total you made) each cookie contains:

Total Carbs = 1.7g
Fiber = 0.6g
Net Carbs = 1.1g

If you DO NOT dust the cookies, each cookie will contain:

Total Carbs = 1.6g
Fiber = 0.6g
Net Carbs = 1g
