Take it from an old pro - if you haven't had any wheat flour in a long time, overloading like that is going to make you as sick as a dog.

This is actually a really good idea if you are going to cheat that is...

Yes! Its not fun at all. I was sick as a dog and have done it a few times over the past 6 years in maintenance.
When do any of us learn?

The choices I make at these dinners actually reflect the way I eat most of the time anyway. I bring a veggie dish with me just in case there are no others there for me to eat. Last time I brought a stewed Italian style onion/zucchini/tomato dish.
I don't eat white flour so I keep my portion of any stuffing very small.
I don't eat any of the bread on the table.
But all the other veggie dishes, that I like and I don't like them all, go onto my plate.

I fully plan to stay with my plan through the holidays doesn't mean that will happen, but thats my plan. All the get togethers are pot-luck, so I'm taking to LC dishes to each event. That way there is enough food that I can eat, and I find it funny, my LC foods, is always the first to go.

The only thing that will bother me is the desserts, but thankfully, I've learned from years of experiance, to just ignore them. Its a little harder when BF sits down next to me with his plate of desserts, right next to me. But he can eat what he wants and I would prefer him to sit with me, I'm a big girl, most days

My mother already asked what I can and can't eat and told me what she's fixing. Also she warned me that there would be other carby foods there for other people. I'm fine with that, I don't have problems walking past those foods anymore, I just load up on anything LC, and if theres not much, theres always food waitng for me at home or the Mc Donalds on the way home.

I know me, a few bites of pie, and its an all out carb fest and last time it took me 5 days to get it under control and another week to loose the weight from it.

Why not bring an LC dessert? That's what I do.

I've experienced this! I take lc dishes thinking I will load up on them and then they end up getting eaten up before I get to them! Love it!

I do the same, but in my circles no one likes my desserts because they are used to sugar and can taste the AS. I just take a serving or two for myself only. Sometimes I eat it at the gathering, but most times I have it hidden in the car and eat it after if I was really tempted by the high carb desserts.

Planning ahead makes a huge difference in the ability to stay on plan!

I did think of that, but I tend to over eat on all desserts, even LC. I just bring extra LC foods and fill up on them. I don't eat desserts any other time, why eat it there?

THe first family event I went to at BF's grandparents, I took some 2 diff LC foods, and by the time I got there, their wasn't much left, I went a little hungry. So, the next time, I still took the same 2 LC foods, but I had some hidden upstairs in the fridge for me. I actually caught BF's brother eating on my plate I made, he didn't understand why I had the food there (mentally challenged) so, I shared with him rather than trying to explain. He was upstairs to hide from the family and I was upstairs to hide food from the family, what a team we made that day

It sounded like you might be tempted off plan by them, that's why I suggested it. If not, more power to ya, girlfriend! But better to overeat an LC dessert than a non-LC dessert, IMHO.

For Freckles: Clever use of a mixture of non-caloric sugars is the way to success. I'd defy anyone to detect any off flavors in a combination of E. and Z. or any number of other combos. They tend to intensify in sweetness and cancel out each other's taste flaws.

That reminds me, I need to get some Truvia.

I'm going to recreate these as LC. I've mastered both Dulce de Leche and have a good LC brownie recipe. So time to combine them!

Nancy, how can you successfully caramelize the milk for dulce de leche without real sugar?

I use Erithrytol and xylitol, they work great. Both sugar alcohols, but E. doesn't have the side-effects. They both are very similar in properties to sugar. It might even work with splenda, but I haven't tried it, there's some sugar naturally in milk.

I posted my recipe in Sweet Treats a few days ago.

Hey as a sidenote on maltitol, how is that sugar counted? Would you just count it as 3/4 that of regular sugar?

I personally can't handle the stuff (it kills my stomach) but my mom can. I just don't think it's a good idea to be buying "low-carb" chocolate because it tastes so much like the real thing. It's easy to go overboard and I don't think it's necessarily low-carb.

Everything can pretty much be made low carb. My entire dinner is, including stuffing and pumpkin pie. No one who eats it is LC except for myself. I never say a word...They eat, they like it and I often get comments on how the food is somehow lighter, fresher, tasting. Hehe. Everyone loves my food-always LC, I just smile and say Thanks!

Hey you all, I just checked on marksdailyapple and found a recipe for pumpkin pie using walnuts for the crust. I would prefer to use Splenda over maple syrup and HWC instead of coconut milk, but other than that, it looks like a great recipe.

I actually just made that recipe. I used a tiny bit of molasses and then stevia instead of maple syrup since I don't have any. HWC would work fine too, I think he was just trying to make the recipe more Paleo-friendly. I've only made pumpkin cheesecake before so I'm excited to see how this comes out.
