Peanut and Cinnamon muffin
10.73 net carbs
2.5 oz roast peanuts chopped
3 tbsp ground flax meal
1 egg
0.5 stk butter
1 tsp ground Cinnamon
stevia drops to taste
Mix well, microwave 90 seconds.
I put more peanuts in than I intended. My old recipe for this calls for 1 ounce and somehow I ended up with 2.5 ounces, so lots more carbs than I intended. I also forgot the baking powder I usually use. Even so it came out quite tasty, if just a little flat. It still raised quite a bit.
