"Good Calories, Bad Calories" is a deep dive into the science. You might want to start out with "Why We Get Fat" which I believe is the simplest and best explanation without being so challenging. Both are by Gary Taubes and both are well worth reading. It all depends on how much you want to challenge yourself.
