Default Tuna Veggie Poppers

This recipe comes curtosy of my Bumble Bee Tuna can. LOL. I couldn't find it listed on their website. I take no credit for this recipe, full credit goes to Bumble Bee Tuna. I hope I'm not offending anyone by posting this.

Recipe as listed:

2 cans (6oz each) Bumble Bee Tuna, drained & flaked
1/2 cup plain nonfat yogurt
1/2 cup minced shallots or onion
6 Tbsp. chopped fresh mint
6 Tbsp. chopped fresh parsley
4 garlic cloves minced
3 Tbsp fresh lemon juice
1 Tsp. ground cumin
20 cherry tomatoes
1 cucumber
parsley sprigs for garnish


Directions:

Mix first 8 ingredients; season with salt and pepper. Cut off 1/4 inch from tops of tomatoes. Cut thin slices from bottoms of tomatoes so that they will stand upright; scoop out insides. Cut cucumber into 1/2 thick rounds. Using melon baller, scoop out some seeds in center of each round, being careful not to scoop through bottom. Spoon tuna into tomatoes and onto cucumber rounds. Garnish with fresh parsley. Makes about 40.

Sounds yummy and if I had all the ingredients I'd be making some right now. Let me know if anyone tries these (or variations) and how they turn out.

Yay, I'm glad it's yummy. I really want to try it but I have trouble getting people to go to the store (I can't drive, I'm too phobic lol). I'm going to try it after I finish induction because I'm wary of tomatoes and yogurt, plus I can't ever get the right amount of carbs with anything on fitday so I'll just wait till after induction. Glad you liked it!
