Thumbs up EASY Mock Potato Casserole (cauliflower)

I just made this up last night... and it came out pretty good!!

You need:
2 large bunches up cauliflower, washed, cut into small pieces (No stems) and bioled until soft in salted water
1 cup shredded cheddar
2 cups sour cream
2 tbsp butter
2 small bunches of green onion chopped finely
salt and pepper to taste (I used none, and it had enough flavor)

Mix cooked cauliflower with butter, green onion, sour cream, and 1/2 of the cheese. Place mixture in baking dish and bake at 375 for about 15-20 minutes (until bubbling) Remove from oven and stir, cover with remaining cheese and bake until cheese bubbles.

Sorry, but I do not know the carb count for this.

I forgot to add - once the cauliflower is cooked, i mashed it up a bit... the pieces were about the size of peas when i was done

I make something similar...

I cook up some cauliflower. When it's done i take my hand blender and puree until it looks like mashed potatos. I add my toppings (butter, sour cream, bacon, chives,no-salt, peper, garlic...anything goes...even cheddar cheese).
I make this 3-4 times a week. I haven't mised potatoes since I started!!

I will have to try your recipe. It's large enough for lots of left-overs!!

Thanks.... I tried this and used it to top a Shephard's pie... WONDERFUL.... just like potatoes. Thanks for sharing.

With many variations. Last night I added cubed chicken that I had browned in olive oil and some mushrooms. Covered it with parmesean cheese and baked it until brown at 425. It was A++.

I add roasted garlic with freshly ground black pepper and sour cream.

I made this tonight. It was awesome! As my husband was eating it up he kept saying "I never thought I would like cauliflower! It reminded me of garlic roasted mashed potatoes....even without any garlic......

I made fauxtatoes tonight for the 1st time - OMG!!!! What I have been missing out on for 2 months! Here is my version...

1 head cauliflower
4 medium cloves garlic
1/4 cup whipping cream (?? - amount is not perfect - see instructions)
salt - optional
1/4 cup of cheese (your preference)
season salt (taste - up to you)

In a large pot, boil water w/ salt, add chopped up cloves of garlic and chopped up cauliflower. I just made sure to get as much of the stem off as I could. Let this boil until cauliflower is very tender. Drain. Place cauliflower and garlic into bowl. Add cheese, season salt and whipping cream. Mash and add whipping cream until consistency is just like mashed potatos.

Question Carb Count

Does anyone know the carb count for the mock potato casserole...the one without the chicken granules??
I am on induction, and wonder if it is something I can have/?

G'day Dar,

Unless someone comes along with exact counts, I think the safest option, is to measure carefully the ingredients and then run them through Fitday.

As for whether or not you can have it, just check the ingredients and maybe adapt it a little so you can have it. For example, make sure the sour cream and cheese is within your daily allowance and you'll be fine. I think these type of recipes lend themselves to experimentation, so it will still be yummy even if it's not exactly the same as the original.

Unless you are planning this as a side dish, I would add a little cooked chicken, ham or similar so that you have a source of protein. Again, Fitday will tell you how much protein is already in the dish from the cheese.

I made the easy mock potato casserole tonight, and it was a big hit with my husband. He usually hates cauliflower, but he ate two large servings! Plus he mentioned that he was happy that he would have a vegetable to eat tomorrow with his lunch while I'm at work. Thanks for the great recipe!
