You'll also find that the alcohol makes it a bit softer, which is a good thing.

I walked into my local library on Saturday ,and low and behold what is displayed on the top of the new book display, you guessed it , Karen's new cookbook! You can bet i checked it out quickly before anyone else could get there hands on it. The recipes are tremendous, and I guess I'll have to break down and buy it, because I'm sure the library will notice it if it becomes missing in action!!!

We ducked into a Barnes and Noble this evening, and Cait suggested I look for it. It was prominently displayed.

I've already read it cover to cover. Now I just have to decide what I'm going to try first...

So far I have made Tamarian's upside down shepherds pie, terrific!
Turkey Tenderloin with pesto and smoked mozzarella, equally fantastic!
and scalloped savoy cabbage.
They all look so tasty and easy! Can't wait to work my way through the book!

Much to my delight, last week I had a visit from my good friend Ruth, who brought me a copy of Karen's new cookbook. Not only does it have a collection of delicious and delightful LC recipes, it's an absolutely beautiful book. I'm reading my way through from cover to cover and enjoying every page!

Karen, I'm sure you are very proud of it. Thank you so much for the energy and time you spent to create this gift to the LC world. And thanks to Rodale for making it so beautiful! Without doubt, an absolute must for every dedicated LC'er and wannabe LC'er!!

My copy just arrived from Amazon.ca yesterday, and I stayed up till two o'clock this morning reading it. I think it's the very best low-carb cookbook I've seen - and I have quite a collection of them!

Now, if only I would stop spending so much time reading them and start spending more time cooking from them, that would be a big help!

I just got Karen's book on Saturday "The Low-Carb Gourmet" I put it on the couch and a little while later I noticed my dh reading through it, he said he picked it up when he saw the cover (the picture of the steamed clams in the bowl) the cover picture made him hungry and he decided to flip through it and said "hey, there is a lot of good recipes in here".

My thoughts exactly, I can't wait to get started on them, my first choice will be the "cream cheese, coconut, and lemon mounds followed by the zucchini cake guess you could say I am in dessert mode thinking

A tip: If you want a simpler cake, bake the batter in a 9 x 13 pan, then make only half the frosting to frost it with.

Well-said, Marlaine! It really is a Gift to all of us. Have been too busy trying out new recipes to come over here and add my voice to the chorus of cheers.

I love being able to hold the book and daydream my way through it (unlike all the wonderful info contained in the elusive electrons on this forum). And I appreciate your personal comments spread throughout, Karen--they really convey your wonderful philosophy of food and life and are just the encouragement I needed. You've given me a new lease on LCing and this whole WOE.

It's also great to see the classics from some of the founding forum members. And the suggested menus are wonderful. I could go on!

Thanks especially for all the fabulous tofu recipes--a nice change from all the Meat, Poultry, Seafood (though your recipes for those pique my interest too)... So far I've tried Tofu-Roni and Cheese --really missed Mac and Cheese LCing and before that low-fatting (blecch), and this is even better than I remembered that dish. And To-frites! WOW! Some of the others I'ved tried so far, all fantastic: Upside-down goat cheese souffle, Colin's Omega Waffles, Meat-Lover's Pizza, Turkey Snackin' Cake and Tiramisu (at last!).

So many recipes, so little time... I agree with Upback: the Cream Cheese, Coconut and Lemon Mounds leapt out of the book at me, too!
