Default Coconut Milk Challenge

Ok, those of us who are crazy experimenters should have a little challenge.

How about we develop a new recipe that can be prepared with 6 or less ingredients (not counting salt & pepper) and one ingredient must be coconut milk? So that gives you 5 other ingredients to work with.

Anyone up for the challenge? Open ended. It should be a new recipe that you invent yourself. There's no winner, except everyone who participates and/or uses the recipes later wins! No time limit, submit a recipe when you have time. But make sure it is YOUR INVENTION and one that you developed in response to the challenge. Not some old thing you've been doing all along.

On your mark, get set, GO! (No pressure!)

Ok, attempt #1 was probably not a total success. It tasted like a cup full of french toast, but I doubt most people want to drink their french toast. It tasted pretty good though.

Ok, it was 1/2 cup of coconut milk boiled with a generous pat of butter. Added nutmeg and cinnamon, a dash of sweetener and a couple drops of vanilla. Broke two eggs into a bowl and slowly poured very hot coconut milk into the eggs, stirring constantly. Then poured the egg/milk mixture back into the pan and heated a bit more, until eggs were just started to set a wee bit... could've probably done it longer and gotten a pudding but was in a hurry.

Poured the hot eggs/coconut milk into a bowl and drank it.

Leave out the cinnamon, add some rum for a hot eggnog!

Ok, Nancy, you've inspired me. I have an idea I'll test out for a breakfast food with coconut milk. I might not be able to test it until the weekend, unless I try for dinner tomorrow (which might happen because I don't have any meats defrosting. lol ).

I've moved onto sauces. Since I try to avoid dairy I thought it might be useful to make coconut milk based sauces. I will try it out on brussel sprouts for lunch or dinner today:

about 3/4 C. Coconut milk
5 large cloves of garlic (pressed, chopped, whatever)
about 1-2 Tbl of fresh thyme (or other fresh herb)
Salt & Pepper
1 Tbl of bourbon

I boiled the milk and bourbon to evaporate the alcohol. Pressed the garlic into it, used lots of pepper a little salt. Let it all cook for 10 minutes, just barely simmering. Added in the fresh thyme cooked for another couple of minutes.

I was thinking vegetable or perhaps on a steak... or chicken!

Bleh! Ok, sauce is down the drain. This is damned hard. Shoot, I thought for sure the sauce would be good. Much easier to google for recipes!

What is making them not work Nancy? Texture, taste, thickness? Thai cooking uses coconut milk a lot so I'd think it would be easy ... but, I haven't tried experimenting yet, so I'll find out.

Your thread reminded me of something.

You probably know the two eggs, 1 can coconut milk, 1 can pumpkin, some splenda, spices, etc - it's a pumpkin pie filling substitute that gets posted around low carb "towns". I love it.

However, last year or so I put some shreaded coconut in and it changed the whole outcome. I tried it a few times and it reminded me of New England Indian pudding.

So there, does that count as a recipe?

I tried mixing coconut milk with rum and splenda and it was pretty bleh -- I threw it down the drain. It's kinda unlike me.

1 can Coconut milk, some Greek yogurt, some sweetener, 3/4 cup of blackberries and some square ice cube makes a very nice smoothie once blended.
