This sounds great! But I thought salsa wasn't allowed, especially during induction. I usually made my taco salad (before Atkins) with ground beef, shredded cheddar cheese, kidney beans, sometimes chopped onion and crunched up tortilla chips, and then instead of dressing we would use salsa.

I guess I'll need to leave out kidney beans and tortilla chips. If salsa is okay, what kind do you use? My husband and I will begin Atkins on 1/6/03, so I'm wanting to collect as many quick, easy recipes as possible!!

Thanks for the reminder that we still can have our favorite taco salad (minus just a few ingredients!). I'll have to check out those cheese crackers, too!
