I had a friend who did somethign similiar but instead of the cheese shown, she put cream cheese with chive (it used to be sold in brick form I guess) and she would lay it on one side and roll.
I think I'm going to try the bacon explosion. I'll use sausage meat in the center, crispy bacon filling, bacon weave on the outside and have some sort of bbq glaze on it.
Just saw that this thread has been resurrected...we've made this several times (in BBQ parlance, this is called a fatty). It's absolutely delicious and very easy to do...and comes out especially fantastic on a smoker (we have a UDS, or Ugly Drum Smoker). It is very salty by the numbers, but actually tastes less salty than you might imagine.
