I have alot of fresh spinach here my aunt gave me, she bought a HUGE thing because it was on sale. So here goes some spinach bread!

Oh darn it! I used my last box of frozen spinach last night. I will definitely try this and probably put some cheese in it. Has anyone tried microwaving this in several 'slice-size' plastic containers like 5" X 5"? I don't plan on going to the store til Monday so if noone has, I'll experiment and let everyone know.

I made a double batch and put most in a 13 X 9 pan, baked it and that came out nice. The rest I tried microwaving in 5" square plastic container. The 1st piece was thin and only took 2 min. and was nice. The 2nd piece was a little thicker so I microed that for 3 min. and that came out a little rubbery. With butter, tho', still quite good. Would be a handy thing to know if you don't feel like scrambled eggs & spinach and just want a piece of 'toast'. I'm going to try beating up 1 egg, a handful of frozen spinach, squeezed dry, add spices and then nuke it for just 2 min. this a.m. Spinach is my new veggie friend.

I'm pretty sure you can have it during induction since all the ingredients are on the acceptable food list.
