Default Mushroom Sauce - Oh My!

I threw this all together and this is what I got - I am not sure about exact measurements or carb counts and I am sure I am not the original creator but I wanted to share it because it was SO good. If you decide to try it you can experiment with the quantities then figure up your carb count.

~1 package of sliced baby bella mushrooms
~ 2 TBSP of Sherry cooking wine
~ 1 Cup of Heavy Cream
~ 1 TBSP of Butter
~ a little bit of diced onion (maybe a tbsp?)
Salt/pepper to taste

I cooked the onion and the mushrooms in the butter until tender then I whisked in the heavy cream and the sherry. I let it reduce down a good bit until it had thickened up. I then added a little salt and pepper to taste.

I used it to top seared turkey breast chops and a nuked turnip. It made a pretty good amount of sauce. There is some left over in my fridge.

Now, the sauce was heavy on the mushrooms - more mushrooms then sauce. So the amount of mushrooms could be adjusted if you prefer even though I really liked it just as it was.

I think the sherry really added something to it so I wouldn't omit that - but if you don't like sherry I bet it would be good with a little balsamic vinegar or red wine vinegar even.

I was craving gravy.

I am NOT really a chef so this might be sort of a normal staple to you guys that cook but it was something new and seemingly creative for me lol

Mmmmmm. I love making cream sauces like this. It brings so much to plain meat. They make a great foundation for creamed soups with added stock and diced veggies as well.

I am going to experiment with some other cream based sauces because I agree, it really made such a wonderful difference!! I LOVE the nuked turnips, by the way. You are right, they didn't taste very turnip-y to me at all.

You know, we used to do a Mushroom Bar at work sometimes (served over fettucine) and did almost exactly that. The only difference was we used freshly minced garlic instead of onion. Either way would be scrumptious. This is something else that would be great over shiritaki noodles. I'd forgotten about it!
