It's a Canadian thing. They actually boast that it still tastes like soap on the package now.

I grew up with lima beans - but not like everyone normally thinks of when they hear lima bean. Dad grew them every single year, but would pick them when they were very young and green, barely starting to develop in the pod (not a bit of starchy taste to them at that stage). They tasted somewhat like a very mild version of a very young green pea.



We'd blanch and freeze as many as possible, so we could eat them all year long. They probably had almost as high of a carb content as any other young bean which hadn't yet matured (as evidenced by how easily the blanching water would foam up and overflow the blanching pot), but they didn't taste like it.



(They were NOT like the "baby limas" you see in the stores - baby limas are a particular variety of lima bean. The ones we had were a large, flat variety, just picked very young and immature to avoid the starchiness)
