Unhappy Fauxtatoes do not taste like potatoes

Okay....I realize that I'm having to get used to different foods and such and I don't intend to be a whiner....BUT fauxtatoes don't taste as much like potatoes as everyone has led me to believe! Am I doing something wrong? Is there a secret ingredient? Just tastes like mashed up cauliflower to me. I'm so disappointed!!!

I steamed the cauliflower til soft, mixed forever with electric mixer, adding cream, butter, salt & pepper. That's all I know to do. They'll do, but it sure would be nice to make them better. Please help.

I noticed that, too. I guess you can't make a cauliflower taste like a potato. You can, however, load it up with the things you'd usually load on a potato. Bacon, cheese and sour cream make it good enough for me. I haven't tried this yet, but apparently, if you bake it like a cassarole, that gets out a lot of the excess water and makes the texture more potato-like.

I had the same experience as you. I did read that aggressively draining the cauliflower (pressing down on it in a strainer to realy remove excess water) helps with the texture/consistency, but it still didn't fulfill that mashed-potatoe-love-thing that I have...

But this recipe did: the "zucchini, jack cheese and sour cream bake" off this site. It doesn't taste like mashed potatoes, but it's creamy and warm and sort of whipped and comforting and delicious. It has completely replaced my desire for mashed potatoes.

Maybe you'll dig it too.

I don't steam my cauliflower. I fry it with a tiny bit of chopped leek until the edges turn a little golden and then steam it in its own juice. Maybe add a tbs or two of water to help it cook. Then you do the mash thing. Try mashing goats cheese or cream cheese in with it.

we always mix cream cheese in with ours and I think a good gravy/sauce is the key to making it taste least like cauliflower

Another good substitute is chayote. We made cheesey scalloped 'potatoes' using chayote last week and it was really good. I would make those again before the faux cauli mashed ones.

The two keys to making it great are:

1. Getting out the excess water
2. Baking it topped with cheese

No, it doesn't taste like mashed potatoes, but it's DARN good.

Lightbulb vinegar

Someone had posted that adding a little splash ov vinegar would eliminate soem of the cabbage smell & taste-so I also thought it might work for cauliflower too- and it does help! Plus, I added cream cheese and a little Brie with herbs- that made it super creamy- I did not add butter at all! Hope this helps!

Thank you for all of the ideas...I'm going to try just adding the cream cheese first...If that doesn't do the trick I will definately try a bit o vinegar. Thanks so much!!!
