Post Potato Substitute

Anyone know of any vegetables that are edible raw and taste like potatoes? I remember hearing of something like that, but can't place the name right now. I'm trying to help my girlfriend lower her carbohydrate intake, but she loves potatoes too much to give them up.

This does not taste like potatoes but when I was craving french fries, I started making turnip fries. I found that I loved the fried grease taste and it got me through the cravings.

Mashed with added sour cream, heavy cream and butter, the cauliflower satisfys my taste for mashed potatoes. It doesn't really have any flavor. (And I add cheese to the top.) It picks up the flavor of the other ingredients and tastes like twice baked potatoes to me.

I can vouch that it edible raw, but I can't describe the taste. Maybe it's like tofu where it absorbs the flavors of whatever it's being cooked with.

Jicama to me tastes like a good apple. I eat it raw while I'm make jicama fries. Cuit the jicama into 'steak fry' size and deep fry for 8-10 min. Satisfies my craving for french fries.
