Default Green Bean Salad

This is what I had for lunch...had left over green beans from supper last night. My Mom makes something like this for special occasions. I didn't measure anything so I'll be as specific as I can.


Green Bean Salad

steamed green beans(not mushy)-a good handful
1 avocado-diced
1/2 to 1 lemon, juiced(depends on your taste)
2-3 green onions(scallions)
1 oz. feta cheese(I used goat feta)
salt and pepper
splash of olive oil

Put green beans in a bowl. Dice avocado, mix with lemon juice and add to beans. Chop up green onions and crumble feta cheese and add to beans. Season to taste with salt and pepper and add a drizzle of olive oil. Mix it up and eat. It's really awesome!

I don't know about the carb level here. I am doing a candida diet which is a bit different than Atkin's but still watches the carbs.

It sounds good except I'm laying off the cheese for at least a while. I think is is causing problems for me.

Hi JAnn...I know what you mean about the cheese, I have a hard time with it too. The goat feta and also goat mozarella doesn't seem to bother me at all as long as I just have small amount.
