Default Hi-Fiber Griddle Cakes (pancakes)

makes 4, serves 2... unless you're like me, then it only serves 1 LOL. they're really yummy!

1/4 cup Carbquik
1/4 cup ground flax
1 t. splenda
1 t. vanilla or maple flavoring
1 large egg
1 Tblsp melted butter
1/4 cup Hood brand Calorie Countdown 2% Milk

Whisk all ingredients and cook like pancakes, using slightly less than 1/4 cup batter for each one.

Nutritional information per serving includes additional (1/2 Tblsp) butter on each cooked griddle cake...

2.3 net carbs
309 calories (86% from fat)
8.83 g. protien
3 g. fiber
70.49 mg. calcium
736 IU vitamin A

This gave me the inspiration to use my standard "dry mix" (a combo of flax seed meal, vanilla protein powder, almond meal, and carbsense baking mix (like carbquik)) and try out a waffle. I tried a couple variants, both worked well. Great idea! I had forgotten that eons ago I bought an old standard waffle iron (most the ones sold nowdays seem to be the belgian, and I wanted the thinner, older typical waffle) just for this.

that's why i don't own a waffle-iron, i can't find one that isn't belgian!

i should look on ebay!

glad you liked them! where do you buy the carbsense baking mix, and does it rise better than carbquik?

it looks like carbsense went out of business....
